Recipe Round Up: Cookies

We haven’t met a person who doesn’t like cookies! Nor have we met a cookie we don’t like. Whether you prefer them warm and gooey from the oven or crunchy and crumbly from the cookie jar, cookies are a universal favourite! Sometimes following a diet can mean sacrificing our favourites… but you don’t have to with these diet-friendly versions.

Keto

We know how important it is to watch carbohydrates while eating ketogenic; every carb counts. But… sometimes you need something sweet and these tasty delights will satisfy your macros and your sweet tooth.

I’ve Finally perfected the cookie recipe! After trying tons of different versions, I’ve finally came up with these amazing #ketocookies . 1️⃣ Ingredients: 2 1/2 cup Blanched almond flour 6.5 tbsp Butter 1 large Egg 1/2 cup Erythritol (or monk fruit sweetener) 1 tsp Vanilla extract 1 tsp Blackstrap molasses 1/2 cup Sugar-free dark chocolate chips! 2️⃣directions: Preheat the oven to 350 degrees. Line a cookie sheet with parchment paper. Use a hand mixer or stand mixer to beat together the butter and erythritol, until it's fluffy and light in color. Beat in the egg, vanilla extract, and blackstrap molasses. Beat in the almond flour, 1/2 cup at a time. Fold in the chocolate chips. Scoop out balls with a spoon, then flatten each cookie to about 1/3 in thick. (You can make them thicker or thinner to your liking. Keep in mind they only spread a little and don't thin out during baking, so make them as thin as you want them when done! Enjoy! #ketorecipes
